This is the ultimate cheese dip. It’s tangy from the beer, spicy from the buffalo, and savory from the cheese. Pairs perfectly with pretzels, hard or soft.

You definitely taste the beer here, so be sure to use one that you like to drink. I like a pilsner or lager for this, like Stella Artois or Peroni, as they’re not too overpowering in flavor but not bland. Do not use pre-shredded cheese here, or it will alter the consistency.

Contrary to the name, this recipe does not use the ingredient ‘green garlic’. We are, however, using a similar sister ingredient, the garlic scape. Some use the terms green garlic and garlic scape interchangeably, and while they are similar they are also very different. So why did I name this recipe ‘green garlic’ and risk adding further confusion? Well, I developed this recipe 4 years ago, and at the time I myself was confused and thought garlic scapes and green garlic were the same thing. So I picked the name that sounded better. Because lets be honest, garlic scapes sounds kinda spooky. I haven’t changed the name because the butter is in fact green and tastes like garlic. You’re just going to have to accept that I am a complicated a layered human being, and not everything is as it seems on the surface..

ANYWAYS, so this recipe highlights garlic scapes, one of my favorite spring and summertime ingredients. What exactly is a garlic scape? It’s the bright green stalk that sprouts out of the top of a garlic plant. It’s flavor profile is slightly garlicky, but not as pungent, and slightly grassy similar to a chive. When cooking with garlic scapes, treat them like you would scallions: they can be kept raw and thinly sliced or blended into a sauce like we did here, but they also taste great when grilled.

Unfortunately, garlic scapes aren’t sold in most grocery stores and are only in season for a limited time. If you’re looking to replicate this recipe without scapes, some substitution options that will yield a similar flavor profile include the following. In place of 3 garlic scapes stalks you can use: 1 small clove of garlic and 2 tbsp finely chopped chives, or 4 scallions, whites and green parts.

Loosely inspired by patatas bravas, this dish combines the delicious flavors of a red pepper based sauce and a garlic aioli and applies them to a tuna tartare (confirming the dish in the photo is missing the aioli, pls ignore). This salad is my love letter to radicchio, a bright pink light in a sea of drab winter produce. If you’re unfamiliar, radicchio is a leafy vegetable that can be eaten raw like you would other leafy greens, but it’s also sturdy enough for cooked preparations like you might do with cabbage. 

Its flavor profile is similar to arugula in that it’s slightly peppery and bitter, but it has a great crunch to it like you’d get in romaine. Which is honestly like the best of both worlds IMO 

Since it’s slightly bitter, I like to balance it out with a vinaigrette that leans on the sweeter side. So here I did a balsamic vinaigrette that has some sweetness from the balsamic and also some honey. I also added some fresh figs for extra sweetness.

I feel like burrata gets a lot of hype for doing the bare minimum. Yes, it’s creamy. But so is ricotta? I prefer serving a ricotta spread like this over a ball or two of burrata when entertaining because it’s much easier to eat / share and it’s also less expensive.

Ricotta is also the perfect blank canvas for endless flavor combinations. Go crazy and customize this to your liking.

Fall cozy alert!!!!!!!! This mac is a hug in a bowl and then some.

For this recipe I call for aged gouda and parmesan to balance out the natural sweetness of the squash. However, feel free to use something like a sharp cheddar. Any salty low moisture cheese will work.

If you’re lactose intolerant (like myself) you’ll be happy to know that cheeses like aged gouda and parmesan are naturally very low in lactose, so this recipe will be kinder to your tummy than other cheesy pastas. If you’re particularly sensitive and want to sub out the butter for ghee, or leave it out completely, feel free!

I encourage you to make a double recipe of the squash purée and use the rest in soups. It also freezes really well.
